Sugar Show Piece exam - Top 1 (SP-B)

Sugar show piece exam on 12 Dec 2013.  We trained over 10 hours workshop and on the exam day we took 5.5 hours to finish the sugar show piece.  Here is my master piece (the one and only one).  I received the "Top-1" reward at the end of the exam day.

Demo 21 : Passionata
Workflow is so packed today!
From cigarettes with Joconde, coconut dacquoise, passionfruit cream, raspberry mousse and the raspberry glaze are done and assembly in 3 hours!

Today is lesson 20, Chef demonstrated 8 items and here is the most interesting item!  Blood orange marshmallow without using egg white!
